The expansive menu highlights the restaurant’s sacred staples—corn (maíz) and agave—with dishes like fresh guacamole topped with lobster al pastor, aguachile de camarón, tacos, and a fall-off-the-bone pork shank served with Istmeño-style mashed potatoes.
