He’s perfected the art of combining unique toppings into flavor experiences you won’t find anywhere else in NYC. Take the Poached Pear slice, for example—aged mozzarella, sweet gorgonzola, and hot honey paired with poached pear for a sweet-savory masterpiece. Or my personal favorite, the Cacio e Pepe, featuring whipped mascarpone, Pecorino Romano, Parmigiano Reggiano, and cracked black pepper. The lines can get long, but trust me, when you finally reach the counter, you’ll want to order 3-4 slices to make it worth the wait. And it absolutely will be!
