Originally founded in Kagoshima City, Japan, in 2011, Shimuja Ramen brings its rich heritage to Miami through the culinary artistry of Chef and Owner Keiichi Maemura. Chef Maemura’s meticulous 13-hour pork-bone broth forms the heart of an extensive ramen menu that includes delicious vegetarian options. Shimuja Ramen is known for its richly flavored broths and fresh ingredients. Their standout dish, the Kagoshima Special, is a delightful combination of smoked pork belly, mixed vegetables, scallions, naruto, fried burdock, a soft-boiled egg, and thick wavy noodles. Other favorites like the Satsuma Tonkotsu and Tokyo Shoyu offer a more classic approach to authentic flavors straight from Japan.
